BEST WHITE CHOCOLATE STRAWBERRY SCONES RECIPE

Instead of picking up a box of chocolates and a teddy bear at the grocery store for Valentine's Day, make homemade white chocolate strawberry muffins! While it's easy to make, it's visually stunning and absolutely delicious, so it's sure to get a response. Serve it in bed with coffee or as a dessert after a big Valentine's Day dinner. Also, S.O. It's good to have on hand in the freezer whenever you want something sweet with coffee or tea. They are tolerant but not so sweet that you feel sick afterwards. When I originally made this recipe in 2014, I used frozen strawberries that I had cut up when they had thawed a bit, but this time I decided to use fresh strawberries because they were starting to show up in the grocery store. These scones were great with frozen strawberries but they blew me away with fresh strawberries. So you can use either, but if your budget allows, go with fresh strawberries. Fresh berries add plenty of sweetness and fresh strawberry flavor to scones.

FREEZE LEFTOVER COOKIES FOR LATER USE.

As mentioned above, I like to freeze these scones so I can have one or two at a time as an occasional treat with my coffee. To freeze these cookies, let them cool completely to room temperature, then place them in a freezer bag or any airtight freezing container. Keep it in the freezer and it will last for about 3 months. You can thaw the scones at room temperature, or if you're in a hurry (as I usually do once I see this pie), put them in the microwave for 30 seconds and then enjoy.

STRAWBERRY CAKE WITH WHITE CHOCOLATE

Homemade white chocolate strawberry muffins are the perfect treat for your loved one on Valentine's Day or any other day of the year!

INGREDIENTS

2 cups all-purpose flour ($0.30)

2 Tbsp granulated sugar ($0.02)

2 tsp baking powder ($0.04)

1/2 tsp salt ($0.02)

6 Tbsp cold butter ($0.60)

1 cup sliced strawberries ($1.40)

1/2 cup white chocolate chips ($1.10)

2 large eggs ($0.47)

1/4 cup milk ($0.10)

1/2 tsp vanilla extract ($0.14)

GLAZE

1/2 cup powdered sugar ($0.04)

1/4 tsp vanilla extract ($0.07)

1 Tbsp milk ($0.03)

INSTRUCTIONS

Heat the oven to 425 degrees Fahrenheit. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.

Grate the cold butter (or cut it into small pieces) and add it to the flour mixture. Using with your hands or a pastry cutter, mix the butter into the flour until only just few small pieces remain.

Add the chopped strawberries and white chocolate chips to the flour mixture and stir until combined.

In a separate bowl, whisk together eggs, milk, and vanilla extract.

Add the chopped wet ingredients to the bowl with the flour mixture. Mix until the dough forms a ball and there is no dry dough left at the bottom of the bowl. The dough may be a little crumbly at first, but it will start to hold better as the strawberries absorb the moisture.

Shape the dough into a flat circle about 8 inches in diameter. Cut the circle into eight wedge-shaped pieces. Place the cut cookies on a parchment-lined baking sheet.

Bake for 15 minutes, or until golden brown. Place the cooled cookies on a wire rack to cool.

While the scones are cooling, prepare the glaze. Whisk the powdered sugar, vanilla, and milk together in a bowl until thickened.

Sprinkle the mixture over the cooled cakes, then serve.

HOW TO MAKE STRAWBERRY WHITE CHOCOLATE CONES - STEP BY STEP GUIDE

Heat the oven to 425 degrees Fahrenheit. In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons sugar, 2 teaspoons baking powder, and ½ teaspoon salt until well combined.

Grease the bowl with the flour mixture with six tablespoons of cold butter. Alternately, you can chop the butter into small pieces. Stir the butter into the flour mixture with your hands until just a few small pieces remain. If you have a pastry cutter, you may also use it.

Cut a cup of strawberries and add to the flour mixture with ½ cup of white chocolate chips. Stir until strawberries and white chocolate are combined with the flour mixture.

In a separate bowl, whisk together 2 large eggs with ½ cup milk and ½ teaspoon vanilla extract.

Add the bowl of wet ingredients to the bowl of dry ingredients.

Mix the wet and dry ingredients together until they form a slightly dry paste. You should not leave a dry dough at the bottom of the bowl. The dough may be a little sticky at first, but it will start to stick a little more as it absorbs the moisture from the strawberries in the dough.

Shape the dough into an 8-inch circle, then cut the circle into eight pieces.

Place the cut cookies on a parchment-lined baking sheet.

Bake the cookies in a preheated 425°F oven for 15 minutes or until golden brown. 

While the scones are cooling, prepare the glaze. Whisk ½ cup of powdered sugar, ½ teaspoon of vanilla extract, and 1 tablespoon of milk until a thick layer of glaze forms.

Once the scones have cooled, sprinkle the glaze over them. It is important to let cakes cool before glazing because hot cakes will cause the glaze to melt and drizzle.

Enjoy right away or save for later! Baked cookies will be good for a day or more at room temperature, refrigerated for 3-4 days, or frozen for about 3 months.
